Cajun Chicken Street Tacos

Celebrate during Carnival this Mardi Gras, or Fat Tuesday, by enjoying street tacos filled with delicious cajun spices.

Ingredients

  • 24 TacoMex street taco corn tortillas
  • 1 red pepper diced
  • 1 green pepper diced
  • 4 tomatoes seeded and diced
  • 1 small red onion diced

Cajun Chicken

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 4 tsp chili powder
  • 4 tsp lime juice
  • 4 tsp paprika
  • 2 tsp cumin
  • 2 tsp garlic powder
  • salt and pepper, to taste

Optional Mexican Street Corn

  • 4 cobs of corn cooked and cut off cob
  • 1 tbsp olive oil
  • 3/4 cup sour cream
  • 1/2 cup crumbled feta or cotija cheese
  • 1 tbsp lime juice
  • 2 tsp chili powder
  • 1 clove garlic minced
  • 1/2 cup chopped cilantro
  • salt and pepper, to taste

INSTRUCTIONS

  • Preheat BBQ grill to med-high heat.
  • Marinate chicken in olive oil and seasonings for 10-20 mins. Add to grill once preheated and cook for 20 min until chicken is fully cooked.
  • Prepare vegetables and toppings.
  • Brush corn with olive oil and grill for 8-10 min. Remove and let cool, then cut all the corn off the cob and place into a large bowl. Toss with sour ceam, feta, lime juice, chili powder, garlic, cilantro, salt and pepper.
  • Heat corn tortillas
  • Add chicken, bell peppers, red onion, and optional Mexican street corn to tortillas. Garnish with toppings of your choice and enjoy!
