Ingredients
- 4 corn or flour tortillas
- 4 large eggs
- 1 can refried black beans
- 1/2 cup fresh salsa, divided
- Crumbled cotija or queso fresco
- Sliced avocado
Directions
- Add vegetable oil to the skillet with a thin layer
- When pan and oil are hot, crack the eggs on the skillet
- Fry the eggs until the whites are cooked
- On a small pan, spray a small amount of cooking spray, add refried beans, stir until heated throughout
- After eggs are finished frying, heat the tortillas on the skillet until they’re warm and soft
- Spread each tortilla with a layer of refried beans, then add a fried egg to each serving
- Add salsa over each serving
- Add crumbled cotija or queso fresco and garnish with a slice of avocado
